Ingredients
• Cilantro Yogurt Dip:
•1½ tbsp whole cumin seeds
• 1 cup cilantro leaves
• 1 small green sliced Thai chilli
• 3/4 cup plain whole-milk yogurt
• 1 tbsp fresh lemon juice
• 1 tbsp sugar • Salt and freshly ground black pepper
Cooking Instructions
• Put the cumin seeds in a small skillet and set over medium heat
• Toast, shaking the
pan, until fragrant and browned; the seeds will start to pop
• Remove from heat, cool
and grind to a fine powder in a spice grinder
• Put the cilantro leaves and chilli in a
food processor and process until coarsely chopped
• Transfer to a mixing bowl and
add yogurt, lemon juice, sugar, and ½ tbsp of finely ground cumin
• Stir well, season
with salt, pepper, and sugar to taste; and set aside
• Deep fry frozen A’Saffa chicken
